Who makes their own birthday cake?
Well of course, I do! Why, you may ask? First, because I love the process of choosing the flavors, gathering the ingredients, & practicing my baking skills! Oh yeah. And also, I am gluten free. It’s tough to find a good GF cake!
So anyway. The cake. One of my favorite flavor pairings recently is LEMON and BLUEBERRY. I especially love LEMON CURD. Omg. Have you ever had it? It’s divine. Buttery + lemony amazingness!!
I knew off the bat that I wanted lemon curd filling. So I made the cakes blueberry. Most recipes call for a lemon buttercream, but I knew my curd would be sour, so I went with plain vanilla buttercream. Then I topped it with candied lemons, sugared blueberries, and sprinkles.
I subbed regular flour with 1:1 gluten free flour and it always works. The texture is a little grainier, but I kind of like that. Cakes made with it also stay moist longer. The best part? I got to share it with my family & a bunch of friends!
